Avocado Pesto Pasta
- 1-2 cups Chef UrbanoQuinoa Pasta Fusilli
- Butter:1tbsp
- Oil:1 tbsp
- Cherry tomatoes :handful
- Garlic powder -1 tsp
- Basil leaves – handful
INGREDIENTS FOR PESTO PASTA SAUCE:
- Avocado -1
- Basil leaves – handful
- Garlic cloves -2
- Walnuts -5-6 pieces
- Lemon juice-1/2
- Parmesan cheese 2-3 tbsp
- Salt as per taste
- Virgin olive oil – 2-3 tbsp
- You can adjust seasonings according to your palette
METHOD FOR PESTO PASTA SAUCE :
Blend all the ingredients in a blender until u get a smooth paste.
METHOD FOR AVOCADO PESTO PASTA:
Boil the pasta in salt water and keep some pasta water aside.
In a pan add some oil & butter , sauté pasta and cherry tomatoes .
Now add some garlic powder, pesto sauce and some pasta water. Combine everything
and garnish it with some basil leaves and Parmesan cheese. Enjoy the pasta with a toasted garlic bread
