One-Pot Lemon Garlic Quinoa with Veggies (Vegan & Gluten-Free)

Light, protein-rich, and refreshing

Ingredients: 

  • 1 cup quinoa (rinsed)
  • 2 cups water or vegetable broth
  • 1 zucchini (chopped)
  • 1 carrot (grated)
  • ½ cup cherry tomatoes (halved)
  • 2 garlic cloves (minced)
  • 1 tbsp olive oil
  • ½ tsp turmeric (anti-inflammatory)
  • Juice of 1 lemon
  • Salt & pepper to taste
  • Fresh parsley (for garnish)

Instructions:

  1. Heat olive oil in a pot, add garlic, and sauté until fragrant.
  2. Add quinoa, water/broth, turmeric, salt, and pepper. Bring to a boil.
  3. Lower heat, cover, and simmer for 10-12 minutes.
  4. Add zucchini, carrots, and tomatoes in the last 5 minutes of cooking.
  5. Turn off heat, squeeze in lemon juice, and fluff with a fork.
  6. Garnish with parsley and enjoy!

Ready in: 20 minutes
